SPICY RANCHER'S DELIGHT

Healthy beef recipes

At the end of a long day, this spicy, savoury dish is a delight to enjoy. The spiciness of this recipe can be adjusted to your personal preference.

Ingredients:

½ pound grass-fed ground beef

½ cup of red and green bell peppers, diced

½ cup of zucchini, diced

¼ tsp garlic powder

½ tsp onion powder

¼ tsp salt

¼ tsp crushed red pepper

½ tsp chili powder

½ cup water

1 cup of frozen corn

1 cup salsa, heat level your preference. (We enjoy Black Bean Salsa.)

¾ cup cheese, shredded

3 cups of cooked rice, type of rice your preference.

Directions

Brown beef in a non-stick frying pan and drain off excess fat. Add bell peppers and zucchini. Sauté for two minutes. Add garlic powder, onion powder, salt, crushed red pepper, chili powder, salsa, frozen corn, and water. Stir to combine and simmer for 10 minutes. Add extra water if needed. Sprinkle with shredded cheese. Cover and set aside for 2 minutes or until cheese melts. Serve over a bed of cooked rice.

Variation: After the mixture has simmered for 10 minutes, add rice. Mix and then sprinkle with shredded cheese. Cover and set aside for two minutes or until cheese melts. Serve and enjoy.
