Crispy Ginger Beef

This recipe works great with flank steak, but other steak can be used as well.  When you are slicing the steak to make the ginger beef strips, make sure that you slice across the grain of the steak.  You want to have small thin bit sized strips of beef.

1 lb of Ranch Direct Steak 

Mix:

2 eggs
1/2 cup water
3/4 cut cornstarch
    1. Slice the Ranch Direct Steak in thin slices. 
    2. In a bowl, slightly beat the eggs, add the water and cornstarch.  Stir together until smooth.
    3. Heat a frying pan with about 1 inch of oil.  When the strips of Ranch Direct Steak is placed in the pan it will deep fry it.
    4. Dip the steak strips into the egg and cornstarch mixture and then fry in the pan until each side is crispy (about 1 min per side).
    5. Remove from the oil and place on a rack to drain.

    Veggies and Sauce:

    • 1 large carrot
    • 1 green pepper
    • 1 red pepper
    • 2 green onions
    • 1 small white or purple onion
    • 2 sticks of celery
    • 3 T minced fresh ginger root
    • 2 T minced fresh garlic or 5 garlic cloves
    • 1/2 cup white sugar
    • 1/4 cup vinegar
    • 4 T soy sauce
    • 1/2 cup water
    • 1 T red pepper flake (optional)

    Directions:

    1. Julienne cut (like small toothpicks) all vegetables in preparation to cooking.
    2. Pre heat pan.  Once hot add 2 T of olive oil, garlic and ginger to allow them to slightly brown and release their flavor.
    3. Add in all the remaining vegetables and cook until tender - about 3 min.
    4. Mix the remaining ingredients and pour over the vegetables.  
    5. Add the strips of Ranch Direct Steak
    6. Simmer for about 1/2 hour and serve over a bed of rice.
